Customization question

Hi guys, I've had this game for a while but I haven't the slightest idea on how to customize any of the conferences, schedules or bowl games. Could anybody out there give me a step by step on how to customize my league?

Unless I am mistaken it can be done in the teams.xml file or you can play in sandbox mode and edit the teams through the Team Info screen.
